    A 27.5° inclination on a good Washita stone, plenty of patience, honing oil and a little bloodshed is all it takes.

  3. I spent 20+ years as a butcher. At some point I learned to sharpen knives. I once had a Victorinox 10 inch steaking knife sharpened so well I could cut an empty Styrofoam cup in in half sidewaways without moving the bottom. In a single slash. Apparently someone didn’t like that so they took my knife and beat the edge off on a steel table while I was away from work. People suck.
